The Baby Goat Cheese Fondue is made of Callu de Cabrettu, an old Sardinian cheese formed by taking the stomach of a freshly slaughtered young goat, still filled with milk from their mother, and fermenting it. It is then melted in the heat and to be enjoyed with croutons, meats, and others.
